With the season for garden gatherings upon us, this quick and easy pud is for the win!

If you happened to try out the Unicorn Toast recipe from earlier this week, and are now left wondering what in Mary Berry’s name to do with all that leftover marshmallow fluff ... here’s a little idea!

@grapenuts_uk Lemon Meringue Tart!!

As far as treats go, this one has the advantage of a high(ish) fibre base that also makes *some nutritional contribution, which is more than can be said for most desserts. (*@grapenuts_uk are a good source of iron, zinc and B vitamins)

With the season for garden gatherings also upon us (sort of), this quick and easy pud is also a great one to pull out of the bag when time (and treats) are of the essence.

You’ll need

150g grape nuts

30h butter

25g sugar

1 jar lemon curd

Marshmallow fluff

.

1 Melt the butter and stir into the @grapenuts_uk

2 Press into the bottom of a pre-greased loose bottom cake tin

3 Bake at 180 degrees (fan) for 10 minutes

4 Remove from oven and allow to cool

5 Add a layer of lemon curd, then a layer of marshmallow fluff.
