Nobody can deny, there’s been a revolution in the UK’s eating habits of late, with rates of Vegetarianism and the popularity of meat free days consistently on the up. In fact, one third of UK consumers are consciously reducing the amount of meat they’re eating, or removing it from their diet entirely.

Translating a desire to eat less meat into action comes down, for the most part, to an open-mindedness to the HUGE potential of vegetables in creating tasty and satisfying meals.

One such meal, is Aubergine Parmigiana.

Made from grilled sliced aubergines, a tomato base sauce and Parmesan, it’s as wonderfully simple as it is delicious, especially when paired with crusty bread and a crisp green salad!

For the how-to of this classic Italian dish, all you’ll need is a good old BBC Food recipe, and a generous helping of A Taste of Sol Parmigiano Reggiano.
