RECIPE: Apricot peanut butter toffee

100g brown sugar
100g caster sugar
125g butter
1dsp golden syrup
1 dspn Peanut Butter
6 dried apricots, roughly chopped

Line a baking dish with greaseproof paper

Spread the chopped apricots evenly across the baking dish

Melt the sugar butter and golden syrup over a low heat, then stir in the peanut butter

Bring to the boil, then pour into the baking dish evenly to cover the apricots

Swirl the dish to move the mixture to the sides/corners if necessary

Allow to set for at least two hours, then cut into squares and serve
