The Ultimate Guacamole

Ingredients:

  • whole ripe avocados (roughly 1 per person)

  • 1/2 - 1 red onion (depends how big your batch is)

  • 1 tbsp lemon juice

  • A large handful of fresh coriander 

  • Salt and pepper

Method:

  1. Chop the onion very finely, place in the bowl and then add the lemon juice.

  2. Peel and mash the avocados until smooth (with a few lumps remaining), then add to the onion in the bowl, and combine.

  3. Chop up the coriander and then mix in with the avocado, leaving a few leaves to garnish the top.

  4. Season with salt and pepper.

  5. Serve with whatever your heart desires (I recommended corn tortilla chips or vegetable crudities).

 

Nutritional info:

Avocados are a great source of unsaturated (healthier) fatty acids as well as boasting fibre, vitamin C, K, E and B6 content!
