With comfort food officially back on the menu, dinners are beginning to look decidedly hot and hearty, and all thanks to the most unlikely of freezer staples, in this case!
The recipe stood out, in particular, for its emphasis of wholefood ingredients, including kidney and pinto beans. We mixed it up somewhat by using cannelleni beans instead, and by adding carrot and mushroom for extra veg equity!
Nutrition aside, this recipe is also quick, easy, meat-free… and guaranteed to appease even the fussiest of *little* eaters!
