When lunch… packs a punch!

I often find, one of the less-spoken-about joys of going for lunch, is how it can spark an idea of something new and novel to then re-create at home.


For me, this is just one of of the things that makes being one of THOSE people who photograph their food, worth every ounce of the stigma!


After dining at the Cascade Poolside Bar at the Anantara, I now have both a new pizza recipe and a new go-to salad to add to my growing (stolen) recipe repertoire.


The salad was a medley of Buffalo Burrata, courgette noodles, baby leaf lettuce, tomato, basil pesto, lemon vinaigrette and pine nuts. Simple…but sumptuous, it had to be said.


The pizza was a deliciously uncomplicated Prosciutto & Funghi (mushrooms, ham, mozzarella, oregano and olives), and stone baked to perfection.


They say imitation is the sincerest form of flattery, so I’m sure the Anantara chef team will take compliment from the fact I’ve already added burrata to my next shopping list!


The hope, of course, is that a bit of copy-cat creativity in the kitchen might imbue my everyday lunches with the same sun-drenched vibes I’ve gotten used to in the last week.


Wishful thinking… perhaps, but a delicious idea nonetheless.
