Vegetables in cake is not a new thing, but it’s something we could potentially all do with more of in our lives right now, as we work to get the balance between ‘soul food’ and ‘whole food’ in our new (very different) routines.
Contrary to popular belief, healthy and hearty needn’t be mutually exclusive, and all it takes is some sneaky veggie additions to a standard cake recipe, to prove the case in point.
Given we currently need all the greens - and cake - we can get, this is just one idea to keep in mind next time a sweet tooth threatens to lead your nutrition astray.
From courgette, to banana, beetroot to carrot... the options are almost as endless as the potential for ‘health by stealth’ that this idea is synonymous with.
