When you’ve spent your morning dreaming about muffins, but better judgement overrides the temptation to lunch on cake… we‘ve got the solution!
Egg Muffins!
These delicious, savoury bites are great for when you fancy a picky lunch, pairing perfectly with salad and fresh bread for the ultimate hunger-buster in a hurry, that’s as healthy as it is satisfying.
The best bit, as well, is that these egg-white muffins can be eaten hot or cold, so proving a useful snack to have in the fridge next time the mid-afternoon munchies strike.
Simple to make, all you’ll need is some Two Chicks pre-separated egg whites, some chopped vegetables and a muffin tray.
Method
1. Preheat the oven to 180 degrees
2 Chop your chosen vegetables (we used green pepper, tomato and spinach)
3. Add one carton of Two Chicks egg whites to a large bowl
4. Add the chopped vegetables
5. Stir in 100g grated cheddar cheese
6. Grease a muffin tray
7. Divide the mixture evenly between the cases
8. Place in the oven for 20 minutes
