Just PEACHY! Comfort food... 'summerised!'

Let’s face it, cereal and toast on repeat can sometimes wear a bit thin, especially when we’re all needing a bit more lure to get out of bed in the mornings.


What that lure is, for today at least, is cinnamon baked peaches on fried brioche toast.

This is comfort food with a summer spin, bringing you all the morning meal feels, but with a refreshing summeryness whose impact is more supercharged up than sluggish! Just what you need when you’ve got a day’s work ahead (or evening if you haven’t.)

To make, simply chop 3 peaches, and bake in the oven for 20 minutes with honey, cinnamon and a dash of olive oil. Pan fry a slice of brioche in a small amount of butter or coconut oil, turning after 2 minutes. Serve with a dash of maple syrup, and your favourite coffee!
