Chocolate Cheesecake… don’t mind if I do!

It’s National Chocolate Day, and a perfect time to pull this ‘healthier’ take on a chocolate cheesecake out of the bag.
Made using wholemeal ingredients, nuts, seeds and cacao, it trumps traditional recipes on the nutritional front by providing useful amounts of B vitamins, minerals, protein, fibre and omega 3 fats, all of which are crucial for the immune and metabolic process that underpin ‘winter wellness.’
As an added bonus, it goes down a treat with a nice brew!
To make, all you’ll need is:
120g wholemeal digestive biscuits
50g Linwoods flax, almond, brazil nut mix
45g butter (melted)
140g cacao
120ml double cream (whipped)
200g cream cheese
115g caster sugar
One of the main ingredients of this recipe – Milled Flaxseed, Almonds, Brazil Nuts, Walnuts & Co-Enzyme Q10 – is a great source of both magnesium and selenium - (98% RI per 20g serving) which helps to maintain normal immune system functioning.
I quite often add this formula to recipes as a way of sneaking some extra goodness into meals and snacks. Because it’s finely milled, the product manages to ‘elevate’ all manner of meals and dishes without changing their flavour or texture, which is especially useful when catering to the nutritional needs of fussy eaters.
