Lunch times during the summer holidays look

There’s a lot of more ‘trying to make things interesting’ (why just have wraps, when you can have quesadillas??) and a lot more noise… for starters.
This quesadillas recipe was relatively simple, and pulled together with a little help from Fitbakes.
Fitbakes wholegrain wraps are high in protein and fibre, and contain no colourings or flavourings. They also hold together pretty well in a frying pan, which is an added bonus.
Admittedly, there was some user error in the first attempt, and the forgotten tomatoes would have added a nice dimension.
That aside, the chicken, bacon and avocado quesadillas were delicious, and a win if only for the extent to which they persuaded a reluctant nine year old to enjoy something green without protest! 🥑
